How to Make Individual Mini Ice-Cream Cakes

Get the kids into the kitchen this summer to help make these individual mini ice-cream cakes are perfect for when they have friends over.

Do you tend to stress bake like me? I find that if I’m having a particularly stressful week I spend more time in the kitchen whipping up treats. I’m not sure whether I find baking therapeutic, if I’m craving something sweet, or if it’s just that I’m avoiding what’s bothering me. Probably all of the above. Regardless, my kids seem to benefit from me being stressed so they aren’t complaining.

Summer certainly adds to the stress levels around here; especially working full time from home and having the kids underfoot every day. It becomes a very fine balance of juggling work, ensuring they are having fun, breaking up disagreements, and tackling household chores.

So I whip up fun treats, a lot. Because that always puts a smile on their faces and keeps them entertained for a little while. Plus with a revolving door of kids it’s always nice to have something fun on hand to share.

Make individual ice-cream cakes

These ice cream cakes are so easy to make and you need very few ingredients, especially if you tend to get a little lazy in the kitchen like me and use a box of cake mix instead of whipping up a cake from scratch.

Ingredients

  • Blue Bunny vanilla ice cream
  • Chocolate cake mix - also anything else you need to make this such as eggs, water, oil/applesauce
  • Whipped cream
  • Sprinkles

Instructions

  1. Prepare your cake mix according to the package directions (if you are using a boxed cake mix).

  2. Line individual brownie pans with parchment paper, and pour 1-2 tablespoons of cake mix into each section.

  3. Bake according to the package directions and set aside to cool completely.

  4. While the cakes are cooling take your Blue Bunny ice cream out of the freezer to soften a little - approximately 20 minutes.

  5. Once the cakes are cooled use a spatula or the back of a spoon to press down on each of them to make them flat on top.

  6. Spread small scoops of ice cream over the top of each cake and put back into the freezer for a minimum of 1 hour, but preferably overnight.

  7. Once ready, remove the mini ice cream cakes from the freezer and spread a layer of whipped cream on top, and then add sprinkles.

Once my brownie pan was full I made chocolate cupcakes with the rest of the mixture.

If you want to set them aside for later, or have some left over make sure to cover them and place them back into the freezer.

I like making mini ice cream cakes for the kids because they can help themselves when they want an afternoon or after dinner treat.

I am definitely a stress baker, but my 15 year old daughter is even more so. Luckily, with finals coming up she is stressing big time… and baking big time. I have to have her make the mini ice cream cakes for sure. #client
