There are two nights a week when things just seem to fall apart around here. My son has martial arts class and between that, school pick-up, homework, and anything else that crops up it almost inevitably turns into a drive-thru dinner night. I’m trying to get better about that though and cut those drive-thru trips to just once a week by prepping a meal before we leave, or popping something into the slow cooker in the morning.

I find that if I at the very least pre-cook meat that can be re-heated then we are less likely to stop for takeout because all I need to do is steam a few vegetables when we get home.

This chicken in a creamy white wine sauce is perfect for whipping up early in the day, and then pre-heating for dinner later on. It’s also a great dish to serve for date night at home, and entertaining guests this summer.

Ingredients

  • 4 chicken breasts - thinly sliced
  • 5 rashes bacon
  • 1 cup Black Box Wine: Chardonnay
  • 1 cup heavy whipping cream
  • 1 onion - finely chopped
  • 1 tbs crushed garlic
  • 1/4 cup fresh thyme - divided in half
  • salt & pepper

Instructions

  1. No need to put any oil in the skillet, but pre-heat it before adding the bacon. Grill on each side until cooked.
  2. Once cooked remove from the skillet and place on paper towels to drain and cool a little. Do not remove the bacon fat from the skillet, instead season your chicken with salt and pepper and pop them straight into the skillet, using the bacon fat to help cook them. Grill for a few minutes on each side until grill marks appear.
  3. Once again, remove from the skillet and place on paper towels once cooked. Add the onion and garlic to the skillet and cook until the onion is translucent. Add in half of the thyme, and then Black Box Wine Chardonnay.
  4. Reduce the heat to simmer and return the chicken and bacon to the skillet. Leave to simmer for about 20 minutes.
  5. Add the heavy whipping cream to the pan and stir a little, turning the chicken over too and continue to simmer for another 10 minutes.
  6. Top your chicken with the remainder of the fresh thyme and serve.

Serve with rice or couscous and steamed vegetables or salad.
