While I'm behind the scenes a little this week working on a few big projects and entertaining the kids who are on spring break, I thought I'd share a few Easter photos with you.
It was a fairly quiet day around here, we don't have any family close by, and even our teen took off to spend the day with his girlfriend, so it was just us and the twins ... and our gardener who was installing our new sprinklers.

Surprise your kids with a special after school or spring break treat.
No baking required and no preparing fancy dishes.
Although I do love preparing fancy tables with baked goods, sometimes it's nice to just sit back, relax, and enjoy a moment of indulgence surrounded by happy little ice cream cake covered faces.

What you need:
Place the meringue nests onto a tray.
Prepare the vanilla pudding according to the package directions - which is simply to whisk 2 cups of cold milk with the pudding mix for 2 minutes. Pour the pudding mix into the meringue nests.
Shave chocolate over the top of the pudding making little curls.
Alternate between placing Peeps and malted milk eggs onto the nests.
Place in the refrigerator until chilled (approximately 10 minutes) and serve immediately - pudding doesn't sit well if left inside meringue shells for an extended period of time, so it's important to make these right before you are ready to serve.

I wouldn't be a good little Aussie girl if I didn't occasionally whip up some fairy bread for the kids.
Only this time I went a little crazy with the cookie cutters.
What you need:
Use the flower cookie cutter to cut the slices of bread before assembling.
Switch to the circle cookie cutter to cut out the center of half the bread flowers.
Place the sprinkles into a bowl.
Spread a thin layer of butter (or whatever you are using) onto the flowers without the hole in them. Turn the bread face down onto the spinkles to attach them.
Apply a smidgen of the sandwich spread you are using to each of the petals of the flower with the hole and then turn it face down onto the flower with sprinkles.

I put a twist on the tried and true favorite 'dirt in a cup' and made some yummy carrot patch treats for the kids. The recipe and instructions can be found over at Kidzui.
These would also make a fabulous treat for a garden party.
