Once a week, on Taco Tuesday, we head to the local hole-in-the-wall Mexican drive-thru and pick up food for dinner. It might be Taco Tuesday, but the little ones always get cheese quesadillas, and Jay and I, more often than not, get a California Burrito ... carne asada with fries. So good!
And so in my never ending quest to come up with food that the kids can eat on nights when we are rushed with homework and after school activities ... and with their love of fries, I decided recently to make Carne Asada Fries for dinner, and they were a big hit. The kids could pick and choose their toppings which was perfect for them.
I needed the recipe to be kept at around 30 minutes because that is usually how much time I have to prepare after finishing up homework, before my son has to eat and change to head to his martial arts class.
