I absolutely love s'mores. But sometimes I want to take it up to the next level and try new ways to make and serve them for parties, because you can't always toast marshmallows over a fire outdoors ... you know, when it's too cold, raining, and snowing outside.
These white chocolate pumpkin spice s'mores bites are perfect to make ahead for fall parties, only require 4 ingredients, and about 6 minutes of cooking time. It doesn't get easier than that. Plus, they allow busy moms to create yummy treats that are budget friendly.
In full disclosure these were supposed to be a combination of half white chocolate and half semi-sweet chocolate, only someone (couldn't possibly have been me) came home with BAKER'S Unsweetened Chocolate instead of BAKER’S Semi-Sweet Chocolate. So, don't do that okay, and then you can have a combination of both flavors.

When I was younger I would go to the bakery on weekends with my mum for fresh bread rolls for lunch and to pick up pastries for dessert or afternoon tea. My favorite was always éclairs. There's just something about the combination of pastry filled with a thick custard cream and chocolate ganache over the top that I have always found irresistible.
And they are surprisingly easy to make ... you know, IF you remember to set a timer ... and also remember to set a timer the next day to crisp the pastry again (when making the pastry a day in advance) ... yes, that may have happened twice. Timer's and I have a battle of wills. Only they keep winning. I will outsmart them though. One day!
