St. Patrick's Day is nearing. Not that I need a reason to bake, but I thought it would be a great opportunity to make a rainbow cake for the kids. Of course it will be well and truly eaten by St. Patrick's Day.

Recently a good friend (hi Serena) was telling me about spinach pancakes that she made for her kids. She knows I blog, and she thought they would be great for St. Patrick's Day.
Of course, I'm terrible with following directions and don't have pureed jar food (which is how she made them), now that I don't have babies anymore.
But these spinach pancakes were delicious. The kids thought so too.
To make Spinach Puree:
Cut the stems off approximately 2 cups of fresh baby spinach. Boil them in a pot of water until limp. Strain, and then pop the strainer into cold water to stop the spinach from cooking. Press the excess water out of the spinach. Pop the spinach into the blender and add a little almond milk. Blend. You now have pureed spinach.
PANCAKES
Ingredients
Combine all of the dry ingredients in a bowl. Gradually add the remainder of the ingredients (leaving the spinach puree and water until last) and combine, stirring with a wooden spoon. After you've added the spinach puree, you will find that the pancake mix is very thick, so gradually add small amounts of water, stirring constantly until the desired consistency is reached.
Put a little spray on the inside of the metal cookie- cutters (to prevent sticking) and pour a little batter in each once assembled in a pan. Cook until bubbles appear on the top and flip.
Serve with a little powdered sugar and 100% maple syrup.
The pancakes will have bits of green on the inside. The more spinach you add, the greener they will be.

SHAMROCK SANDWICHES

How to make:
Using a shamrock cookie cutter, cut the bread and cheese. On one slice of bread spread a layer of pesto. Place cheese in-between slices. Put a thin layer of butter on the outside of the sandwich and grill until bread begins to brown and cheese starts to melt.
This idea came from Kiddio who last week tweeted that she had made Pesto and Grilled Cheese sandwiches. I saved that tweet because I was in the car at the time, sent it to my gmail account, stopped at the store and picked up ingredients and made it the next day. It was SOOOOO good. The kids loved it too, so I decided to make a shamrock version for St. Patrick’s Day.

I posted the link for the recipe here, but here it is again. These were delicious. I even cooked the corned beef for the first time. It was super easy and tasted great.
I served our sandwiches with Veggie Sticks from Trader Joe’s. So good.

One thing I came across this morning is a thread in Martha Stewart Moms by the amazing Manic Mother for St. Patrick’s Day ideas. There are a few things on there already, but if you have any other tips, please add them.
Shannan Powell lets you in on what she does to celebrate with her family on St. Patrick’s Day over at the Party Planning Professor. And being more than half Irish, she knows what she’s talking about.
