I have a really busy week next week with doctors and dentist appointments, the babies birthday party and oh yeah hopefully meeting her – OMG I feel like I'm going to meet royalty.  I also have a fridge full of fresh vegetables thanks to my fortnightly (that's every other week for you not in the know) delivery of fresh fruit and vegetables.  So I deemed today Supercook Saturday.  I thought this would be a good chance to clean out the pantry and fridge.  So I cooked, and I cooked, and I cooked some more.  I now have 4 nights of dinners (plus leftovers for a couple of other nights).   I feel so good knowing I don't have to cook next week.  Yippee!

All of these meals were cooked with whatever I had on hand.  I researched recipes and amended where necessary depending on what I had available.
