The tomato plants are still thriving, and have completely taken over the front garden bed, so I'm getting more creative with how to use them, especially in dishes that the kids will eat.
Pesto is a staple in our house, it's a favorite of all the kids to enjoy with pasta, plus, I use it in grilled sandwiches, on flatbread, pizza, and in tomato soup. This roasted tomato pesto recipe will be a hit with everyone and gives a new spin on traditional pesto.
