These Mediterranean-inspired chickpea patties on skewers with a tzatziki dipping sauce are a delicious appetizer for a Mediterranean dinner party.

I’m going to share one more recipe with you too. These Mediterranean-inspired chickpea skewers with tzatziki dipping sauce are perfect for entertaining at home.

Mediterranean Inspired Chickpea Skewers with Tzatziki Dipping Sauce

Ingredients

  • 1 pkg (4) Morningstar Farms® Mediterranean Chickpea Burgers
  • Feta cheese - crumbled
  • Grape tomatoes
  • Purple onion
  • 2 8oz tubs plain Greek yogurt
  • 1/4 cup dill - chopped
  • 1/2 lemon - juice only
  • 1 tsp crushed garlic
  • pinch salt and pepper
  • 1/2 large cucumber

Instructions

Tzatziki dipping sauce

  1. Combine the yogurt, dill, lemon juice, and garlic in a bowl.
  2. Remove the seeds from the cucumber. After peeling it, slice in half lengthways. I prefer to use a melon baller to remove the seeds, it makes things so much easier.
  3. Grate the cucumber into the yogurt mixture and combine with a spoon. Cover and refrigerate.

Skewers

  1. While the Mediterranean Chickpea Burgers are still frozen, slice off the ends to make it square and then cut it into quarters.
  2. Remove the seeds from the cucumber. After peeling it, slice in half lengthways. I prefer to use a melon baller to remove the seeds, it makes things so much easier.
  3. Place a tomato, slice of onion, and a piece of Mediterranean Chickpea Burger on a skewer and grill for a couple of minutes on each side until the burger is cooked through.

Remove the tzatziki sauce from the refrigerator and place it into individual dipping cups. Top with crumbled feta and a little extra dill. Place one of the warm skewers on top and serve.

Recipe makes 16 skewers and 6-8 dip cups

Don’t throw out the excess burger. Grill the pieces you cut off, dice them and then add them into a Greek-inspired salad the following day.

Tip: I added a small fork too (or you could use a small tasting spoon) for adding sauce over your skewer.
