The weather still hasn't cooled down here, but I'm dreaming of autumn and hoping for a few cooler nights when we can sit outside to eat. It doesn't mean that I can't make a little comfort food though, right? We can just crank that air conditioning up a little.
Last week I was down and out for a couple of days with what I'm assuming was a reaction to a tetanus shot. Whenever I'm sick, or feeling a little down all I want is comfort food. On one of the mornings I woke up and was craving scrambled eggs, so of course my man jumped up and set about making them for me. Maybe it's because I'd fed him bacon the night before ...
Note to self: Feed him bacon more often.
So yes, the night before I needed comfort food and decided to make a homemade potato and bacon soup. It was delicious. I ate it again the next day for lunch too. It was exactly what I needed.
This soup is fairly quick and easy to make and doesn't require too many ingredients. I didn't even have to go to the store, I had everything I needed. Actually I may have used milk or cream, but I had neither in the refrigerator, so the Half & Half was used instead. It worked out perfectly.
