Fall to me means listening to the rainfall, snuggling under blankets in front of a fire, the leaves changing colors, and all things pumpkin and squash.

Stews are the perfect fall food, don’t you think? They are warm and hearty, and you can add almost anything into them. Perfect, really!

This stew can be served two ways; in bread bowls, or on its own with a side dish of rice, pasta, or bread.

I made the stew gluten-free so that my son could eat it if you do this too serve it with gluten-free bread rolls, or on a plate with sides. For those who aren’t gluten-free serve however you please.

Beef and Butternut Squash Stew in Bread Bowls

Ingredients

  • Beef stew meat - I purchased a larger package
  • Potatoes - diced (approx 3 cups)
  • Butternut squash - diced (approx 3 cups)
  • Large bread rolls
  • 1 can Hunt's diced tomatoes with rosemary and oregano
  • 1 yellow onion - diced
  • 1 tbs crushed garlic
  • 2 tsp crushed ginger
  • 2 cups beef stock
  • 1/4 cup gluten-free all-purpose flour (or regular if you don't need gluten-free)
  • 2 tsp dried thyme
  • 2 tsp allspice
  • butter - 2 tbs for pot, 2 tbs melted for meat, extra for bread
  • salt & pepper

Instructions

  1. In a bowl combine the stew meat with butter, salt and pepper, and flour. Toss to combine.
  2. Cook the beef in batches in a large pot with 2 tablespoons of butter. Once browned add the onion, garlic, and ginger.
  3. Add the thyme, allspice and another big pinch of salt and pepper and stir to combine.
  4. Add in the potato and butternut squash.
  5. And then the can of Hunt's diced tomatoes with rosemary and oregano.
  6. Add the beef stock and stir to combine. Bring to the boil, and then reduce to a simmer. Place the lid on the pot but leave a little gap for steam. Simmer for an hour and a half.
  7. While the stew is simmering preheat the oven to 400F.
  8. During the last 5 minutes of the stew cooking place remove the top and part of the center from the roll. Spread butter over the inside of the roll. Place on a baking tray and pop it into the oven for 5 minutes.
  9. Fill your bread with the stew and serve!

You can find Hunt’s diced tomatoes in the pasta aisle at your local Walmart. You will also find all other ingredients to make this recipe right there at Walmart too, including your fresh produce.
