Lemon Chicken With Fried Rice and Dumplings

Spend less time in the kitchen cooking and cleaning up with this semi-homemade lemon chicken paired with fried rice and dumplings for a quick and easy weeknight dinner.

If you’ve  been hanging around here for a while you would know that I’m all about quick and easy meals. The quicker, and easier, the better. Especially on busy weeknights, or weekends when the kids have friends sleeping over, like this past weekend.

One thing that I find useful, that not only cuts back on the cooking and cleaning up, but also on my time spent in the kitchen is to make one dish, and then pair it with ready-made sides.

One of Marisol’s favorite dishes is lemon chicken, so when she asked if she could have a friend come to our house for a sleepover I knew things would get a little crazy with all of the activities they wanted to do, but I still wanted to make her favorite dish for a special dinner.

As I’m typing this I’m still cleaning up the signs of a good time. It’s amazing how much mess three 11 year old children can make. Between the silly string, the pumpkin guts and paint from carving pumpkins, the mattresses and blankets from a living room sleepover, the popcorn and snow machine ‘bar’ the kids set up for movie night, the face painting, and the crime scene they created in the backyard using fake blood from the Halloween decorations I have out (that I’m STILL trying to get up).

So, when it came to dinner I wanted as little mess and fuss (and clean-up) as possible, but still make the kids a meal they would love.

I decided to pair Ling Ling Chinese-Style Vegetable Fried Rice, with Ling Ling Chicken Dumplings in Chili Sauce, plain white rice, and my homemade lemon chicken.

And the kids loved it.
