Orange Loaf Cake

A delicious orange loaf cake with orange-flavored icing drizzled over the top.

Ingredients
  

Orange loaf cake
  • 2 cups all-purpose flour plus an extra tbsp
  • 3/4 cup white sugar
  • 1 tbsp baking powder
  • 1 pinch salt
  • 1 cup Planet Oat Oatmilk
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 1/2 cup unsalted butter softened plus 1 tsp extra
  • 1 tbsp orange zest
  • 2 tbsp orange juice freshly squeezed
Orange icing
  • 1 cup confectioner's sugar
  • 2-3 tbsp orange juice freshly squeezed
  • zest from the orange

Equipment

  • 1 Loaf pan
  • 2 Mixing bowls

Method
 

  1. Preheat the oven to 350F
  2. Grease the loaf pan with softened butter and flour, shaking off the excess flour.
  3. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. Set aside.
  4. In a smaller mixing bowl, beat together the butter, oatmilk, eggs, vanilla extract, and orange.
  5. Gradually pour the wet ingredients into the dry ingredients, beat together until combined and creamy.
  6. Fold in the orange zest, then pour your batter into the loaf pan.
  7. Bake for approximately 55-minutes. Insert a wooden skewer into the center of the loaf. If it comes out clean, that indicates that the loaf is baked through.
  8. Set the loaf cake aside on a wire rack to cool completely.
  9. Once you are ready to drizzle over your loaf (when it's cool), beat together the confectioner's sugar and fresh orange juice. You can add more or less orange juice for consistency.
  10. Drizzle the icing over the loaf and then top with orange zest.
