Preheat oven to 375F
Grease loaf pan and line it with parchment paper
In a large bowl, combine the flour, cinnamon, flaxseed, baking soda, and baking powder using a wooden spoon. Make a well in the center.
In the second bowl, cream together the butter, vanilla, and sugar.
Add the eggs one at a time, beating after each is added.
Gradually add in the milk, continuing to stir until well combined.
Add the wet ingredients into the dry ingredients and stir to combine.
Peel and chop the apples into small pieces. Stir them into the mixture.
Pour your loaf cake mixture into the loaf pan.
Combine the ingredients for the topping in a bowl with a fork. Crumble the mixture across the top of the batter in the loaf pan.
Bake for approximately 1 hour or until browned and when a skewer is inserted in the center it comes out clean.
