While I'm behind the scenes a little this week working on a few big projects and entertaining the kids who are on spring break, I thought I'd share a few Easter photos with you.
It was a fairly quiet day around here, we don't have any family close by, and even our teen took off to spend the day with his girlfriend, so it was just us and the twins ... and our gardener who was installing our new sprinklers.
I didn't have a lot of time this Easter to make fancy gifts for the kids at school (I know, very unlike me), so the little man and I popped down to Target one afternoon and picked out some cute bunny treats together.
I decided to pretty them up a little instead of handing them out as is, so after digging around in my craft supplies I found some really cute mini paper bags that I had purchased at Michael's recently, they are the Recollections brand and there were 25 in the pack, so the perfect amount.

No baking required and no preparing fancy dishes.
Although I do love preparing fancy tables with baked goods, sometimes it's nice to just sit back, relax, and enjoy a moment of indulgence surrounded by happy little ice cream cake covered faces.
Prepare the vanilla pudding according to the package directions - which is simply to whisk 2 cups of cold milk with the pudding mix for 2 minutes. Pour the pudding mix into the meringue nests.
Shave chocolate over the top of the pudding making little curls.
Alternate between placing Peeps and malted milk eggs onto the nests.
Place in the refrigerator until chilled (approximately 10 minutes) and serve immediately - pudding doesn't sit well if left inside meringue shells for an extended period of time, so it's important to make these right before you are ready to serve.
