How to make easy mini lemon bundt cakes.
I’ve had a craving for lemons this past week.
No, I’m not pregnant.
Yes, I’m sure.
First I made lemon scones, and then I decided I needed to make lemon bundt cakes too – and I wonder why I can’t lose weight. Honestly. {shaking head}.
It was an idea that popped into my head in the middle of the night and I literally ran to the grocery store the next morning.
I’m a little crazy like that.
You can make this with an ordinary lemon cake or vanilla cake mix, depending on how 'lemony' (yes that's totally a word today) that you want it.
Ingredients:
- Box of cake mix (don't forget to check the back for extra ingredients needed such as vegetable oil, eggs, etc)
- Lemon curd
- Confectioner's sugar
Preheat the oven according to the directions on the cake mix box (as if you are cooking for cupcakes).
Mix up the ingredients for the cake mix according to the directions on the packet.
You will need to put a little more cake mix into the bundt pan than normal so that there is no hole in the base of the bundt cake once it is cooked. Bake them according to the directions on the cake mix box (for cupcakes)
Allow the bundt cakes to cool once they are out of the oven, and then spoon in the yummy goodness that is lemon curd and sift a little confectioner's sugar over the top.
