The before-school breakfast rush just got easier. I’ve got a simple pancake recipe, and I’ll show you how to freeze pancakes too.

Do you have busy mornings like I do? Trying to get three kids to school on time, all with homemade lunches, homework, jackets, and anything else they may need is quite a sight in our house, especially with a 7:20am drop-off for my first child.
My kids absolutely love pancakes, however, they were normally reserved for weekends when we had more time to sit as a family; we all know that every minute counts when trying to get kids ready for school during the week. My kids are also becoming more picky, they get tired of cereal every morning, so to mix things up a bit, I’ve started freezing pancakes for them. The best part is, while we drop our teenager at school, the kids can eat a pancake sandwich in the car. To make these simply spread a little butter and jam between two pancakes and you have breakfast on-the-go.

- Combine the dry ingredients (flour, sugar, baking powder, and salt) in a bowl, making a little well in the center, and set aside.
- Add the vinegar to the milk in a jug (for easy pouring) and set aside.
- Add about half of the milk, the butter, and the vanilla and mix.
- Pour the mixture into the well of the dry ingredients and combine with a wooden spoon.
- Continue adding milk until the pancake mixture has reached the desired consistency.
- Use a large serving spoon or an ice-cream scoop to spoon the mixture into your pan.
- Make sure the heat is down to about medium, otherwise, they will cook too quickly and burn.
- As you begin to see bubbles appear on the surface, flip your pancakes.

How to freeze pancakes
Line a baking tray with parchment paper. Once the pancakes have cooled completely spread them out on the parchment paper so they aren’t touching. Add a piece of parchment paper over the top, then continue layering pancakes.

If you make these in the morning, leave them until later in the afternoon in the freezer, and then transfer them in batches into freezer bags. Put enough in one freezer bag for the next time you will use them. Don’t forget to label your bag with the date you froze them.
The quickest way to defrost these for your quick breakfast on-the-go is in the microwave. Stack three or four pancakes on a plate and heat for about one minute.
Tip: Add fruit such as blueberries to your pancake batter before cooking them for an extra tasty breakfast.
