This was lunch today.  It was absolutely delicious.

Blueberry Chicken Salad

Couscous and blueberry salad

Ingredients:

  • 1 cup Israeli Couscous (cooked and kept warm)
  • 3 cups Baby Spinach (stems trimmed)
  • 1/4 cup Walnuts (chopped)
  • 3/4 cup Blueberries
  • 1 cup Chicken breast (cooked and cut into bite-sized pieces)
  • 1 tablespoon olive oil

Pop everything into a big bowl and toss.

Tip:  The olive oil helps in preventing the Israeli couscous from sticking.

That looks SO refreshing. My boys wouldn’t touch it with a 10 foot pole, but I’d eat it for days!
