This was lunch today. It was absolutely delicious.
Blueberry Chicken Salad
Ingredients:
- 1 cup Israeli Couscous (cooked and kept warm)
- 3 cups Baby Spinach (stems trimmed)
- 1/4 cup Walnuts (chopped)
- 3/4 cup Blueberries
- 1 cup Chicken breast (cooked and cut into bite-sized pieces)
- 1 tablespoon olive oil
Pop everything into a big bowl and toss.
Tip: The olive oil helps in preventing the Israeli couscous from sticking.
