Yesterday while I was driving to The OC (I love calling it that by the way, makes me think of the TV show) I received a phone call from Jay at school. His teacher wanted to know if I could make chicken curry for the class for lunch today. We eat a LOT of curry in our house (huge fans of Indian and Thai food) so of course I agreed and now we have dinner for tonight cooked already 🙂

Randy and I had a little taste test last night and really liked it and Jay said it was a hit at school today so I thought I'd post the recipe. I cooked enough for 28 kids and a teacher to sample so I'll reduce the recipe to a standard meal size – meaning that it would feed my family of 5 LOL


Chicken and Mango Curry

4 chicken breast fillets (cut into bite sized pieces)
Extra Virgin Olive Oil cooking spray
1 large onion (finely sliced)
1 tsp grated ginger
1/4 tsp saffron strands
1 tbsp hot water
1/2 tsp salt
1/4 tsp ground white pepper
2 tsp curry powder
1/2 cup cream (add a little more if you like more sauce)
1 bag frozen mango chunks
2 small red chillies (finally chopped) – if you want a little kick to it

Crush the saffron strands (I use a mortar and pestel for this), add the tablespoon of hot water and stir a little to dissolve the saffron. Spray pan and cook onion, chilli (if you are using it) and ginger until the onion is soft and a little golden. Add chicken, curry, salt & pepper to pan and stir until the chicken is covered and starts browning. Add the cream and saffron to the pan and simmer for 10 minutes. Add mango and cook for just a few minutes until the mango is heated through. Serve with basmati rice.

The kids would have eaten this if they weren’t having left over pasta with meatballs. They do like curry as long as it is very mild and I made this dish without the chilli seeing as I was feeding it to Jay’s class.
