Entertaining at home this Cinco de Mayo doesn’t have to be elaborate and you don’t need to spend hours in the kitchen. Prepare a couple of simple dishes that can be mixed and matched and that are sure to please everyone.

Guacamole is the perfect appetizer with corn chips, but also makes a great addition as a side to the main meal.
For the main, I made simple pork carnitas using a recipe from my favorite Mexican cookbook, “Truly Mexican,” by Roberto Santibanez.
They basically cooked themselves, everything tossed in a pot on the stove for an hour and a half and then transferred to the oven for 30 minutes.
Serve the pork carnitas with a mixture of flour and corn tortillas, rice, beans, beans and guacamole, with a few extra sliced onions, cilantro and lime. Guests can decide how they want to make their main dish which is perfect for guests with food allergies.
Don’t forget beverages, glasses of water and Bud Light Lime-A-Ritas® are perfect.
