As the weather gets warmer, there’s nothing quite like packing away the big pots and casserole dishes from our winter comfort food of soups and casseroles, firing up the grill, and whipping up light salads that we can enjoy outside on the patio.
This recipe is a must-have to add to the meal plan rotation.
Asian-inspired chicken salad with mandarin oranges
Ingredients
- Romaine lettuce
- Purple cabbage
- Mandarin oranges
- Carrots
- Grilled chicken breasts
- Green onions
- Wonton strips (or crunchy noodle topping)
- Dressing

Ingredients
- 3 cups romaine lettuce
- 1 cup purple cabbage
- 4 Halos mandarins
- 2 Carrots
- 2 cups grilled chicken breasts
- 3 green onions
- 1 cup wonton strips or crunchy noodle topping
- Dressing: Your favorite Asian ginger dressing
Instructions
- Roughly chop the lettuce and cabbage.
- Peel and slice the carrots into thin strips.
- Thinly slice the green onions.
- Put all of your ingredients in a large bowl and lightly toss to combine.
