Oh my, I made lemon curd this afternoon and I have to say it is absolutely delicious. A blog I frequent (okay I'll admit daily LOL) One More Moore recently posted a recipe and fabulous photographs (not that I'd expect any less of her as she always posts such wonderful things).

The last time I actually ate lemon curd was when my mum and sister organized a huge basket of yummy treats be delivered to me about 3 years ago for christmas while Randy was deployed and they wanted me to have a little something from Australia home and there was a jar of lemon curd in there. Delicious.

I doubled the recipe today, made 2 jars (which I'm just dying to grab a spoon and dig into) and with the remainder made lemon tarts. I'm so excited to whip up some fresh cream tonight and have one of these tasty little treats.

Ok, I’m so glad you showed that you made lemon tarts with it. I have wondered for YEARS what to do with lemon curd. I always get it from my aunt at Christmas and it sits and sits because I didn’t know what to do with it. LOL (crazy since I’m usually so good about figuring these things out. heehee)So, is there a recipe for the tarts, or do you just put the lemon curd in the tarlets?

Debi: You can also put it in between layers of spongecake and put a little icing sugar over the top, yummy. Think I’ll do that with one of the jars.Oh and with the other jar I plan on baking muffins and topping them with lemon curd and a little white chocolate, OMG I haven’t had one of those for years.I just put the lemon curd straight into the little tartlets, put a little freshly whipped cream on top and grate a little chocolate over it. Delish.We grew up on strawberry or lemon tarts as treats. I love them.
