My parents are visiting from Australia for the summer and although I normally cook most nights I have to admit that we've been eating out a lot more than normal because we've had long days out of the house, so it's been nice every so often to make a homemade meal with all of us pitching in.
My mum and I created this recipe together. Which was quite hysterical for anyone who was listening to us. There was a lot of 'so what else should we put in there' ... and 'how about a dash of this...or a pinch of that'. But it turned out to be delicious. Even our pickiest little eater (the little man) deemed the chicken delicious and gave it a resounding two thumbs up.
When making this dish I recommend you marinate the chicken earlier in the day and leave it in the refrigerator until you are ready to pop it on the grill. Note: We only put it into the refrigerator for an hour before grilling and it was still great though.

The kids have been gone this week and so I've been pulling double-time at home trying to get through as much work as possible so that there's a little less juggling next week.
With my kids coming home tomorrow though (time has flown) I suddenly realized that the man and I hadn't used this opportunity to spend any quality time together. So, I took the morning off work. We enjoyed a lovely hand-in-hand stroll around a local lake and then ran a few errands together ... that totally counts as a date, right? ... before working together to create a delicious dinner.
The best part of date night at home and cooking together while the kids are gone is that we don't have to worry about meals being kid-friendly.
Cooking together means him grilling and me putting out side dishes. I love it when we can use a little teamwork and I don't have to spend that extra time in the kitchen standing over the stove.
