These vegetable pasties are hearty, delicious, easy to make and perfect for Meatless Monday. Plus, they freeze really well, so make a few and keep them for a busy night.
Loaded potatoes have always been one of my favorite quick dinners. When I was younger my parents would wrap potatoes in foil and pop them into the fireplace until they were charred on the outside and soft and fluffy on the inside.
Now we have a gas fireplace and can't do that, but we can still do baked potatoes in the oven, and we do them often. And by we, I mean it's normally on a night when the man is in charge of dinner. He does a pretty yummy bacon, cheese and green onion topped potato. I love to mix things up though and try different toppings, and baked potatoes are perfect because you can put so many things on them, and it's perfect meal for using up leftovers.
For example, let's say you purchased veggie burgers and only have one or two left in the box in the freezer, or you have half used vegetables, then this is perfect to make an easy weeknight meal.

When I meal plan each week I always try to take into account food items that can be used over two meals, especially with items that you know there will be leftovers of, or dishes that I can cook double the amount and use for a different meal.
One night last week I made homemade chili with cornbread for dinner. The following night, we lit the firepit outside and once the coals were hot, I fire-roasted potatoes, that we could use the leftover chili on to create a completely different dish, along with a variety of other toppings.

We enjoyed delicious appetizers and wine (from Fresh & Easy of course), had cooking lessons with Chef Cynthia, ate a delicious Thanksgiving dinner, made our way through dessert, then rolled ourselves home.
Seriously I ate so much I don’t think I ate again until the afternoon the next day. It was all so yummy, and I cannot wait to try out a few new dishes next week for Thanksgiving.
