Gourmet Chicken Sausages For Summer Barbecues

Change up your summer backyard barbecue recipes this year with gourmet chicken sausages topped with a delicious summer topping.

Will you be grilling this Father’s Day? We grill most weekends over summer so this weekend won’t be any different.

It’s a great opportunity to let the kids play in the pool, and we can grill and prepare food poolside while supervising them.

Do you have favorite foods to grill? We grilled hamburgers a couple of weeks ago, and often grill seafood, so to mix things up a bit, our most recent outdoor dinner was gourmet sausages.

Gourmet Chicken Sausages

Ingredients

Sausages

  • Aidells Mango Smoked Chicken Sausage
  • 2 tbs honey
  • 1/4 cup soy sauce
  • 1 tsp chopped garlic
  • 2 tsp lime juice
  • King's Hawaiian Hot Dog Buns

Topping

  • 1 cup corn kernels
  • 1 cup fresh pineapple (finely chopped)
  • 6 slices bacon
  • 1/2 cup cilantro (chopped)
  • 1 tsp chopped ginger

Instructions

Sausages

Combine soy sauce, garlic, lime juice, and honey in a bowl. Cut angled slices into each of the sausages, but don't cut all the way through, just to about halfway. Brush the sausages with the honey mixture, cover, and refrigerate for about 1 hour.

Remove the sausages from the refrigerator and grill until heated through and grill marks form on the sausages.

Topping:

Grill or fry the bacon - I prefer to grill it on my small indoor grill. Once cooled roughly chop it into smaller pieces. Put a little water in a pot and cook the corn kernels. Drain the corn and add the ginger to the pot, returning it to low heat. Add the corn and pineapple until the pineapple is warmed. Add the bacon and then right before you are ready to serve, add the cilantro.

Serve your gourmet sausage and topping in a King’s Hawaiian Hot Dog Bun.
